Banana Pancakes



Ingredients (serves 1)

  • 1 ripe banana

  • 2 eggs

  • ¼ cup gluten-free oats

  • Pinch of salt

  • Pinch of cinnamon

  • 1 tbsp peanut or almond butter (optional)

  • Coconut oil (for cooking)


Method

  • Mash banana and combine with eggs, oats, salt, cinnamon, and nut butter (if using).

  • Heat skillet over medium-low and add coconut oil.

  • Pour ~¼ cup batter per pancake. Cook 2 mins per side.

  • Serve and enjoy!
