Blueberry Almond Oatmeal Cups



Ingredients (serves 1)

  • 3 cups rolled oats

  • ½ tsp cinnamon

  • 1 tsp baking powder

  • ½ tsp sea salt

  • 1½ cups unsweetened vanilla almond milk

  • ¼ cup maple syrup

  • 2 tbsp flaxseed

  • 1 tsp vanilla extract

  • ½ cup applesauce

  • 2 tbsp almond butter

  • ¼ cup blueberries (divided)

  • 2 tbsp sliced almonds (divided)


Method

  • Preheat oven to 350°F. Line muffin tin.

  • Mix dry ingredients.

  • Whisk wet ingredients, sit 5 mins.

  • Combine all, scoop into muffin cups, top with remaining blueberries and almonds.

  • Bake 30–35 minutes. Cool before storing.
