Carrot Cake Bars 🥕🍰

Ingredients:

- 3 large carrots (cleaned and shaved)

- 2 cups oats

- 1 tsp rice (any kind)

- ½ tsp, nutmeg

- 1 tsp cinnamon

- ¼ cup of stevia or sweetener depending on how sweet you like (taste the batter before baking to gauge sweetness)

- ¾ raw almonds

- 1.5 cups unsweetened almond milk


Method:

Combine all ingredients in a food processor or blender and pour into an oiled loaf pan.

Bake at 350 degrees for 30-33 minutes.


Makes 5-6 thick bars.


ICING RECIPE:

2 tablespoons of plain yogurt + 2 tablespoons of vegan cream cheese + 1 tablespoon of sugar. You can substitute sweeteners for any you enjoy! ✨
