3 Cod filets
1 bag of Coconut flakes
1 can of coconut milk or creamĀ
Olive oil
Sea salt
Baking sheet

Method:
Prepare: Preheat oven to 375Ā°F and line the baking sheet with parchment paper.
Prepare Coconut Cream and Flakes: Pour coconut cream into a bowl. Place coconut flakes in a separate bowl.
Coat Cod: Coat cod filets with coconut cream on both sides. Press cod into coconut flakes to coat evenly.
Assemble and Season: Place coated cod on the prepared baking sheet. Drizzle with olive oil. Sprinkle with sea salt to taste.
Bake: Bake for 20-25 minutes or until the cod is cooked through and the coconut crust is golden.
Serve: Remove from oven, plate, and serve hot.
