Ingredients:
Lamb Chops
1/2 lemon juice
3 tsp Herbs de Provence seasoning
3 tsp Oregano
6 cloves of minced garlic
Olive oil or avocado oil
Black pepper
Flaky sea salt
Method:
1: In a large bowl, mix lemon juice, Herbs de Provence seasoning, oregano, minced garlic, 4-6 tbs of oil, black pepper, and flaky sea salt
2: Place lamb chops into the bowl, evenly coat the mixture onto the chops, and let them marinate for at least 45 minutes
3: Preheat oven to 370 degrees
4: Heat your cast iron skillet and place 1 tbs of oil inside
5: Place marinated lamb chops inside the pan and sear for 2 minutes on each side
6: After searing both sides, place the cast iron skillet with the shanks inside, into the oven for 3 minutes, then remove the skillet from the oven and transfer the lamb chops immediately to a plate to avoid further cooking.
7: Plate and serve alongside a simple cucumber salad and hummus.

NOTE:
The cooking time and oven temperature are for medium to medium-rare lamb chops (Britt's recommendation). Longer cooking time in the oven will result in a more well-done meat if preferred.
