Oatmeal Cups with Peanut Butter Banana

Ingredients (Serves 3)

  • 3 cups old-fashioned rolled oats

  • 1/2 teaspoon cinnamon

  • 1 teaspoon baking powder

  • 1/2 teaspoon sea salt

  • 1 1/2 cups unsweetened vanilla almond milk

  • 1/4 cup maple syrup

  • 2 tablespoons ground flaxseed

  • 1 teaspoon vanilla extract

Optional Toppings

  • 3 tablespoons peanut butter

  • 2 mashed bananas (~1/2 cup)

  • Banana slices (optional topping)


Method:

  • Preheat oven to 350°F. Line a 12-cup muffin tin.

  • Mix dry ingredients in one bowl.

  • Mix almond milk, maple syrup, flaxseed, and vanilla in another bowl.

  • Let wet mixture sit for 5 minutes.

  • Add mashed banana and peanut butter into the wet bowl.

  • Combine all into the dry bowl.

  • Scoop into muffin tin and top with banana slices.

  • Bake 30–35 minutes until set.
