Oatmeal Cups with Peanut Butter Banana

Ingredients (Serves 3)
3 cups old-fashioned rolled oats
1/2 teaspoon cinnamon
1 teaspoon baking powder
1/2 teaspoon sea salt
1 1/2 cups unsweetened vanilla almond milk
1/4 cup maple syrup
2 tablespoons ground flaxseed
1 teaspoon vanilla extract
Optional Toppings
3 tablespoons peanut butter
2 mashed bananas (~1/2 cup)
Banana slices (optional topping)
Method:
Preheat oven to 350°F. Line a 12-cup muffin tin.
Mix dry ingredients in one bowl.
Mix almond milk, maple syrup, flaxseed, and vanilla in another bowl.
Let wet mixture sit for 5 minutes.
Add mashed banana and peanut butter into the wet bowl.
Combine all into the dry bowl.
Scoop into muffin tin and top with banana slices.
Bake 30–35 minutes until set.
