chia seed pudding




CHIA SEED PUDDING

Ingredients:

  • 1 tablespoon chia seeds

  • 1/2 tablespoon Truvia or stevia (or sweetener of your choice)

  • 1/4 cup coconut milk

  • Fruit of your choice (such as sliced bananas, raspberries, blueberries) 

  • 1/2 tablespoon almond butter (optional, for topping)


Method:

  • In a bowl, combine the chia seeds, Truvia (or sweetener), and coconut milk. Stir well to ensure there are no clumps.

  • Cover the bowl and place it in the refrigerator for a minimum of 3 hours. This allows the chia seeds to absorb the liquid and create a pudding-like consistency. You can also leave it overnight for a thicker texture.

  • After the chia seed pudding has been set, remove it from the refrigerator. Stir it well to make sure the mixture is evenly combined.

  • Build your bowl by adding sliced bananas and any other fruit of your choice on top of the chia seed pudding.

  • Optional: Drizzle almond butter on top for added flavor and creaminess.
