Ingredients:
• 2 cups almond flour
• 1 tsp baking powder
• 1 tsp cinnamon
• ¼ tsp sea salt
• 4 large eggs
• ¼ cup unsweetened almond milk
• 2 tbsp maple syrup (or monk fruit if lower sugar)
• 1 tsp vanilla extract
• Optional: ⅓ cup dairy-free chocolate chips or blueberries
• Optional: 1 scoop vanilla protein powder (plant-based or collagen)
Method:
Preheat oven to 350°F and lightly grease an 8x8 or 9x9 Pyrex baking dish.
In a large bowl, whisk together all wet ingredients.
In another bowl, mix dry ingredients. Then combine with wet.
Fold in chocolate chips or berries if using.
Pour batter into Pyrex and smooth the top.
Bake for 25–30 minutes, until a toothpick comes out clean.
Let cool, slice into 6 squares, and store in the fridge.
