Apple Cinnamon Oatmeal Cups



Ingredients (serves 1)

  • 3 cups old-fashioned rolled oats

  • ½ tsp cinnamon

  • 1 tsp baking powder

  • ½ tsp sea salt

  • 1½ cups unsweetened vanilla almond milk

  • ¼ cup maple syrup

  • 2 tbsp ground flaxseed

  • 1 tsp vanilla extract

  • Extra ½ tsp cinnamon

  • 2 tbsp almond butter

  • ½ cup applesauce

  • ¼ cup diced apple, divided


Method

  • Preheat oven to 350°F. Line a 12-cup muffin tin with liners and spray with non-stick spray.

  • In a large bowl, mix oats, cinnamon, baking powder, and salt.

  • In another bowl, whisk almond milk, syrup, flaxseed, and vanilla. Let sit 5 minutes.

  • Stir in cinnamon, almond butter, applesauce, and half the diced apple.

  • Combine wet and dry ingredients, scoop into muffin cups, and top with remaining apple.

  • Bake 30–35 minutes. Cool before storing.
