Ingredients:
2 cups Brussels sprouts, halved
1 tbsp olive oil
1/4 cup pumpkin seeds
1/4 cup dried cranberries
Salt and pepper to taste
Method:
Preheat: Preheat oven to 400°F (200°C).
Toss: Toss Brussels sprouts with olive oil, salt, and pepper. Spread on a baking sheet in a single layer.
Roast: Roast for 25-30 minutes. Stir halfway through, until tender and golden.
Serve: Sprinkle with pumpkin seeds and dried cranberries before serving.
