ROASTED BRUSSELS SPROUTS WITH PUMPKIN SEEDS AND CRANBERRIES


Ingredients:

  • 2 cups Brussels sprouts, halved

  • 1 tbsp olive oil

  • 1/4 cup pumpkin seeds

  • 1/4 cup dried cranberries

  • Salt and pepper to taste


Method:

  1. Preheat: Preheat oven to 400°F (200°C).

  2. Toss: Toss Brussels sprouts with olive oil, salt, and pepper. Spread on a baking sheet in a single layer.

  3. Roast: Roast for 25-30 minutes. Stir halfway through, until tender and golden.

  4. Serve: Sprinkle with pumpkin seeds and dried cranberries before serving.
