Carrot Daikon Salad

Ingredients:
2 medium daikons
4-5 carrots
micro greens
bonito flakes
Yuzu Dressing:
2 T Tamari
4 T Water
1 T Yuzu
1 T Sesame Oil
1 inch ginger grated
Method:
Using a mandolin or a peeler tool shave thin slices of the daikon and the carrots and place in a bowl.
Use 1.5-2 cups of daikon carrot mix, add a handful of micro greens, add 1 tbsp of bonito flakes, pour over 2-3 tablespoons of dressing and mix.
Tip: I usually double or triple the recipe to keep in the fridge. Keep the carrots and daikon separate. Assemble the salad fresh when serving!
