Carrot Daikon Salad

Ingredients:

  • 2 medium daikons

  • 4-5 carrots

  • micro greens

  • bonito flakes


Yuzu Dressing:

  • 2 T Tamari

  • 4 T Water

  • 1 T Yuzu

  • 1 T Sesame Oil

  • 1 inch ginger grated


Method:

  • Using a mandolin or a peeler tool shave thin slices of the daikon and the carrots and place in a bowl.

  • Use 1.5-2 cups of daikon carrot mix, add a handful of micro greens, add 1 tbsp of bonito flakes, pour over 2-3 tablespoons of dressing and mix.

  • Tip: I usually double or triple the recipe to keep in the fridge. Keep the carrots and daikon separate. Assemble the salad fresh when serving!
