Apple Sauce Pancakes

Ingredients (serves 1)
½ cup unsweetened applesauce
2 eggs
¼ cup gluten-free oats
Pinch of salt
Pinch of cinnamon
1 tbsp peanut or almond butter (optional)
Coconut oil (for cooking)
Method
Combine applesauce, eggs, oats, salt, cinnamon, and nut butter (if using) in a bowl.
Heat skillet over medium-low and add coconut oil.
Pour ~¼ cup batter per pancake. Cook 2 mins per side.
Serve with toppings like fruit, honey, or syrup.
