Copycat erewhon orange Chicken

Ingredients (Serves 3)
1 package of Chicken (Abbot’s brand is preferred) or real chicken breast (with fat cut off)
1/4 red onion, chopped
1/4 bell pepper, chopped
1/2 cup of carrots, thinly sliced
1 cup cabbage, shredded
1 handful of cilantro, chopped
1 handful of basil, chopped
1 clove of garlic, peeled
1 tablespoon minced ginger or chopped fresh ginger
1 teaspoon soy sauce
2 tablespoons sriracha
2 tablespoons canned mandarin juice and oranges
1 tablespoon raw real honey
Sprinkle of peanuts
Avocado spray (or cooking oil of your choice)
Cauliflower rice (for serving)
Method:
Heat a large skillet or wok over medium-high heat. Spray avocado spray or add cooking oil of your choice.
Add the chopped red onion, bell pepper, carrots, and garlic to the skillet. Sauté for about 3 minutes until the vegetables start to soften.
If using real chicken breast, cut it into bite-sized pieces. Add the chicken to the skillet and cook until it is fully cooked through.
While the protein is cooking, prepare the sauce. In a bowl, mix together the soy sauce, sriracha, mandarin juice, honey, and ginger.
Once the chicken is fully cooked and slightly browned, add the shredded cabbage and sauce mixture to the skillet. Toss to combine.
Add chopped basil and cilantro and cook for an additional 2–3 minutes.
