Copycat erewhon orange Chicken

Ingredients (Serves 3)

  • 1 package of Chicken (Abbot’s brand is preferred) or real chicken breast (with fat cut off)

  • 1/4 red onion, chopped

  • 1/4 bell pepper, chopped

  • 1/2 cup of carrots, thinly sliced

  • 1 cup cabbage, shredded

  • 1 handful of cilantro, chopped

  • 1 handful of basil, chopped

  • 1 clove of garlic, peeled

  • 1 tablespoon minced ginger or chopped fresh ginger

  • 1 teaspoon soy sauce

  • 2 tablespoons sriracha

  • 2 tablespoons canned mandarin juice and oranges

  • 1 tablespoon raw real honey

  • Sprinkle of peanuts

  • Avocado spray (or cooking oil of your choice)

  • Cauliflower rice (for serving)

Method:

  • Heat a large skillet or wok over medium-high heat. Spray avocado spray or add cooking oil of your choice.

  • Add the chopped red onion, bell pepper, carrots, and garlic to the skillet. Sauté for about 3 minutes until the vegetables start to soften.

  • If using real chicken breast, cut it into bite-sized pieces. Add the chicken to the skillet and cook until it is fully cooked through.

  • While the protein is cooking, prepare the sauce. In a bowl, mix together the soy sauce, sriracha, mandarin juice, honey, and ginger.

  • Once the chicken is fully cooked and slightly browned, add the shredded cabbage and sauce mixture to the skillet. Toss to combine.

  • Add chopped basil and cilantro and cook for an additional 2–3 minutes.
