High Fiber SFV Meatloaf

Ingredients:
2 leeks
2 scallions, finely chopped with whites and greens separated
1 shallot, diced
2 cloves garlic, finely minced
1 1/2 tsp. sea salt
1/2 tsp. cracked black pepper
1 tbsp. tomato paste
1/2 cup beef broth
1 tbsp. coconut aminos
1 lb. grass-fed ground beef (or any ground meat you prefer)
1/2 lb. Ground grass-fed bison (or any ground meat you prefer)
1/3 cup almond flour
1 egg
1/2 cup organic unsweetened ketchup (I like Primal Kitchen Foods ketchup)
Method:
Thinly slice all vegetables and browN in the a saucepan, add in tomato paste and allow the mixture to brown,
deglaze the pan with the beef broth and stir. Turn heat off and add meat to the mixture, stir and combine all ingredients well.
Place mixture in baking dish and top with ketchup.
Bake at 325 for 70 minutes. Allow meat loaf to sit for 5-10 minutes before slicing into.
This recipe serves 5; I always double this recipe for meal prep and feel free to get creative with the protein options. I love beef and lamb combo as well.!
