High protein enchilada

Ingredients (Serves 4)
1 cup mushrooms, minced
1 package of lean ground beef, chicken, or turkey
Avocado or olive oil spray
1/2 cup Siete refried black beans
4 tortillas
Siete enchilada sauce (red or green)
3 tablespoons Primal Kitchen queso
Aluminum foil
Optional Toppings
Violife vegan cheddar cheese sprinkle
Jalapeños
Cilantro
1/2 avocado
Method:
Heat a pan and spray with oil.
Brown the ground meat slightly.
Add mushrooms and a bit of water.
Cook for 3–5 minutes more.
Add black beans and cook a few minutes.
Wrap the filling in tortillas, top with sauce and queso, and bake if desired.
