Peach Cloud Bake



Serves 4

Ingredients (base):

  • 1 cup cottage cheese

  • 4 large eggs

  • 2tsp vanilla extract

  • 2 cup oats/almond flour

  • 2tsp baking powder

  • 2T Flax

  •  ¼ tsp sea salt

  •  ¼ cup unsweetened almond milk

  • 1 tbsp maple syrup (or monk fruit if lower sugar)

  •  1 tsp vanilla extract

  • Optional: 1 scoop vanilla protein powder (plant-based or collagen

  • ¼ cup peach

  • 1 tbsp Cocojune yogurt

  • 1 tsp Swerve confectioner




Assembly (Base):

  • Preheat oven to 350°F and lightly grease an 8x8 or 9x9 Pyrex baking dish.

  • In a large bowl, whisk together all wet ingredients.

  • In another bowl, mix dry ingredients. Then combine with wet.

  • Fold in chocolate chips or berries if using.

  • Pour batter into Pyrex and smooth the top.

  • Bake for 25–30 minutes, until a toothpick comes out clean.

  • Let cool, slice into 6 squares, and store in the fridge


Assembly (Topping):

  • ¼ cup Peach (chopped)

  • 1 tbsp Cocojune yogurt

  • 1 tsp Swerve confectioner
