Peach Cloud Bake

Serves 4
Ingredients (base):
1 cup cottage cheese
4 large eggs
2tsp vanilla extract
2 cup oats/almond flour
2tsp baking powder
2T Flax
¼ tsp sea salt
¼ cup unsweetened almond milk
1 tbsp maple syrup (or monk fruit if lower sugar)
1 tsp vanilla extract
Optional: 1 scoop vanilla protein powder (plant-based or collagen
¼ cup peach
1 tbsp Cocojune yogurt
1 tsp Swerve confectioner
Assembly (Base):
Preheat oven to 350°F and lightly grease an 8x8 or 9x9 Pyrex baking dish.
In a large bowl, whisk together all wet ingredients.
In another bowl, mix dry ingredients. Then combine with wet.
Fold in chocolate chips or berries if using.
Pour batter into Pyrex and smooth the top.
Bake for 25–30 minutes, until a toothpick comes out clean.
Let cool, slice into 6 squares, and store in the fridge
Assembly (Topping):
¼ cup Peach (chopped)
1 tbsp Cocojune yogurt
1 tsp Swerve confectioner
