Meatballs Ingredients:

  • 1 lb ground chicken/turkey

  • Egg, breadcrumbs or almond flour

  • Herbs/spices including chili paste, cilantro, garlic, ginger


Curry Sauce:

  • Lite coconut milk, pumpkin puree, peanut butter, soy sauce, curry powder

  • Carrots, red bell pepper, peas


Method:

  • Form and brown meatballs.

  • Simmer sauce with vegetables and meatballs.

  • Serve with rice, quinoa, or noodles.
