Meatballs Ingredients:
1 lb ground chicken/turkey
Egg, breadcrumbs or almond flour
Herbs/spices including chili paste, cilantro, garlic, ginger
Curry Sauce:
Lite coconut milk, pumpkin puree, peanut butter, soy sauce, curry powder
Carrots, red bell pepper, peas
Method:
Form and brown meatballs.
Simmer sauce with vegetables and meatballs.
Serve with rice, quinoa, or noodles.
