Zucchini Boats with Meatballs

Ingredients (Serves 1.5)

  • 3 large zucchini

  • Beyond Meatballs

  • Dairy-free mozzarella

  • Mushrooms

  • 1 jar marinara (low sugar)

  • Crushed red pepper

  • Sea salt

  • Other vegetables of choice

  • Avocado or coconut oil spray


Method:

  • Preheat oven to 425°F.

  • Cut zucchini in half and scoop center.

  • Place in baking dish and sprinkle with sea salt.

  • Bake 25 minutes.

  • Meanwhile, cook mushrooms and meatballs in skillet.

  • Add marinara to meatballs and cook covered.

  • Top zucchini with meatballs, crushed red pepper, and vegan cheese.

  • Bake or serve as is.
