Zucchini Boats with Meatballs

Ingredients (Serves 1.5)
3 large zucchini
Beyond Meatballs
Dairy-free mozzarella
Mushrooms
1 jar marinara (low sugar)
Crushed red pepper
Sea salt
Other vegetables of choice
Avocado or coconut oil spray
Method:
Preheat oven to 425°F.
Cut zucchini in half and scoop center.
Place in baking dish and sprinkle with sea salt.
Bake 25 minutes.
Meanwhile, cook mushrooms and meatballs in skillet.
Add marinara to meatballs and cook covered.
Top zucchini with meatballs, crushed red pepper, and vegan cheese.
Bake or serve as is.
