Avocado Herb Salad

Ingredients (Serves 1)
1/2 avocado, sliced or cubed
1 jalapeño, thinly sliced
1/4 cup fresh cilantro, chopped
1 tablespoon fresh dill
1/4 cup vegan feta, crumbled
Drizzle extra virgin olive oil (EVOO)
1/2 tablespoon lemon juice
1/4 cup toasted seeds (sunflower or pumpkin)
Method:
In a bowl, combine avocado, jalapeño, cilantro, and dill.
Add feta and gently toss.
Drizzle with EVOO, enough to coat.
Squeeze lemon juice over salad.
Sprinkle with toasted seeds.
Toss gently again and serve.
