Avocado Herb Salad

Ingredients (Serves 1)

  • 1/2 avocado, sliced or cubed

  • 1 jalapeño, thinly sliced

  • 1/4 cup fresh cilantro, chopped

  • 1 tablespoon fresh dill

  • 1/4 cup vegan feta, crumbled

  • Drizzle extra virgin olive oil (EVOO)

  • 1/2 tablespoon lemon juice

  • 1/4 cup toasted seeds (sunflower or pumpkin)


Method:

  • In a bowl, combine avocado, jalapeño, cilantro, and dill.

  • Add feta and gently toss.

  • Drizzle with EVOO, enough to coat.

  • Squeeze lemon juice over salad.

  • Sprinkle with toasted seeds.

  • Toss gently again and serve.
