Ingredients (serves 1)
1 head butter lettuce
1 cup cooked butternut squash
Nuts/seeds (e.g., almonds, walnuts)
Berries (e.g., strawberries, blueberries)
Juice of ½ lemon
Salt, to taste
1 date, chopped
2 tbsp Green Goddess Tessemae dressing
4 oz protein (shrimp, chicken, or turkey)
Method
Prep lettuce, squash, and ingredients.
Toss lettuce, squash, berries, nuts, lemon juice, salt, and date.
Add dressing and toss.
Top with protein and serve.
