Butternut Squash Salad



Ingredients (serves 1)

  • 1 head butter lettuce

  • 1 cup cooked butternut squash

  • Nuts/seeds (e.g., almonds, walnuts)

  • Berries (e.g., strawberries, blueberries)

  • Juice of ½ lemon

  • Salt, to taste

  • 1 date, chopped

  • 2 tbsp Green Goddess Tessemae dressing

  • 4 oz protein (shrimp, chicken, or turkey)


Method

  • Prep lettuce, squash, and ingredients.

  • Toss lettuce, squash, berries, nuts, lemon juice, salt, and date.

  • Add dressing and toss.

  • Top with protein and serve.
