Chicken / Tofu Tikka Masala

Ingredients (Serves 3)
Extra firm tofu (or chicken)
Cinnamon
Masala powder
Cumin
Yogurt (Kite Hill recommended)
Lemon (fresh)
Organic ginger
Peeled garlic
Jalapeño
Coconut cream
Canned tomato sauce
Method:
Drain extra firm tofu.
Make marinade with 1 spoonful Kite Hill yogurt, cinnamon, masala powder, cumin, sea salt, lemon juice, minced ginger, minced garlic, chopped jalapeños — mix in a bowl.
Chop tofu into cubes.
Mix tofu with the marinade.
Cover and refrigerate for 30 minutes.
Spray pan with avocado or coconut oil and heat to medium-high.
Add tofu to pan, brown for 6–7 minutes.
Add 2 spoonfuls of coconut milk.
Add 7–8 oz canned tomato sauce.
Add a little more masala powder and salt.
Stir everything together.
Simmer 5 minutes to thicken.
Serve with a little cilantro and cauliflower rice.
