5-8 jumbo shrimp (peeled & deveined)
1/4 cup arrowroot starch
1/4 cup unsweetened shredded coconut
Garlic powder & salt
1 egg (beaten)
Preheat the air fryer to 360°F. When heated, spray the basket with cooking spray.
- Set up a dippinf station with 2 large plates
-Add egg to one plate. In second plate, combine coconut flakes & seasoning
-Pat shrimp dry. Toss in arrowroot powder.
-Dip shrimp in egg wash.
-Dip shrimp in coconut mixture. Use your hands to pat the mixture onto the shrimp so it sticks. Make sure they are well coated.
Place the coconut shrimp in the air fryer so they are not touching, and spray the top of the shrimp. Cook for 10-12 minutes, flipping halfway through.
I paired this with Bibb lettuce, fresh mango, red onion, and @tessemae lemon garlic dressing for a fun salad
